Today, I’d like to talk about the most fascinating and artistic stage in single malt whisky production: copper distillation equipment.
Step inside any distillery, and your eyes will immediately be drawn to those towering stills glowing with a warm reddish-gold sheen. They are not merely the heart of the distillery, but the shaper of whisky’s flavour soul. With advanced stainless steel technology widely available, why do we still insist on copper? There are three core reasons.
First, copper acts as an excellent flavour catalyst. Under high-temperature steam, copper chemically reacts with sulphur compounds in the spirit, stripping out unpleasant harsh notes such as sulphur odour and leaving behind a clean distillate. Meanwhile, copper catalyses the formation of esters — the source of fruity and floral aromas found in whisky.
Second, copper boasts unmatched thermal conductivity. It transfers heat quickly and evenly, delivering a stable, controllable distillation process. Precise temperature regulation is essential to maintain consistent quality in every drop of new make spirit.
Lastly, and most artistically: the shape of the still defines the spirit’s character. Every copper pot still is a one-of-a-kind sculpture. Tall, slender stills increase vapour contact with copper surfaces and create greater reflux, yielding lighter, florally expressive spirit. Shorter, broader stills reduce reflux, producing richer, fuller-bodied spirit with oily texture.
